
This mango and coconut chia pudding is the perfect tropical summer dessert! It requires only 3 ingredients and is incredibly easy to make. Mango contains lots of micronutrients including vitamin A, vitamin C and folate. Chia seeds are a source of omega-3 fatty acids and fibre, making this a healthy dessert option!
Ingredients
- 1 cup frozen mango
- 400 ml can of coconut milk
- 2 tbsp chia seeds
Optional
- Fresh mango to serve
Instructions
- Use a blender to blend the frozen mango and coconut milk until smooth.
- Stir in the chia seeds.
- Put the chia pudding into mason jars or containers, cover and refrigerate for at least two hours or overnight.
- Serve with fresh mango for extra deliciousness!
