
I have been making these loaded sweet potato fries for years now and I just keep coming back to them! They contain lots of fibre, micronutrients from the vegetables and protein from the beans. Adding avocado will also provide you with a source of healthy fats.
Ingredients
- 2 medium sweet potatoes, peeled and cut into sticks
- 400 ml can of black beans, drained and rinsed
- ½ cup corn (I used frozen)
- ½ cup white cheddar cheese, grated
- 1 tsp cumin
- 1 tsp smoked paprika
- 2 tbsp olive oil
- Salt and pepper
Optional toppings
- 2 green onions, thinly sliced
- Avocado as a source of healthy fats
- Jalapenos
Instructions
- Preheat the oven to 425°F.
- Toss the sweet potato sticks with the olive oil, cumin, smoked paprika and season with salt and pepper to taste.
- Place the sweet potatoes in an even layer on a baking sheet. Bake for 20 minutes.
- Remove the pan from the oven. Flip the sweet potatoes. Layer the beans and corn over the sweet potatoes and return to the oven for 15 minutes.
- Remove the pan from the oven once again and add the cheese. Return to the oven for 5 minutes or until the cheese has melted.
- Remove from the oven and top with sliced green onions, avocado and jalapenos if using.
- Enjoy!
