
This mango, avocado and edamame salad with peanut dressing is a delicious way to get some extra veggies in! Eating the rainbow and increasing the diversity of plants we consume each week can support our gut health and this salad makes doing so easy.
Ingredients
Salad
- 2 cups cooked quinoa
- 1 large carrot, grated
- 1 cup shelled edamame
- 1 cup red cabbage, chopped
- 1 mango, chopped
- 1 avocado, chopped
- ½ cup unsalted roasted peanuts
Dressing
- ¼ cup smooth peanut butter
- Juice of a lime
- 1 tbsp tamari
- 2 tbsp maple syrup
- 2 cloves garlic, minced
- Crushed red pepper flakes to taste
- ¼ cup water
Instructions
- Combine all of the salad ingredients.
- Combine all of the dressing ingredients and mix until smooth.
- Toss the salad with the dressing and enjoy!
