
This cinnamon apple chia pudding parfait is so creamy with a hint of tartness from the apples and warmth from the cinnamon. It is the perfect fall snack or dessert! It also happens to be vegan and contains chia seeds which are a source of omega-3 fatty acids, minerals and fibre.
I like to make these and keep them in the fridge for when I am craving a delicious and nutritious snack.
Ingredients
- 400 ml can of coconut milk
- 2 tbsp chia seeds
- 2 large honeycrisp apples
- 1 tsp cinnamon
- 1 tbsp maple syrup
- 1/2 cup water
Instructions
- Mix the coconut milk and chia seeds. Transfer to an airtight container and refrigerate for at least 4 hours.
- Peel and chop the apples into bitesize pieces.
- Place the apples, cinnamon, maple syrup and water into a pot and simmer over a low heat for 20 minutes or until the apples are soft. Allow to cool.
- Assemble the parfaits by alternating layers of the chia pudding and stewed apples.
- Enjoy!
