
These sweet and spicy roasted carrots with feta are the perfect addition to your Sunday dinner! When we eat fruits and vegetables that are each colour of the rainbow every day we provide our bodies with an array of important micronutrients. Carrots are a great source of beta carotene which your body converts to vitamin A.
Ingredients
- 10 medium carrots
- 1/4 cup honey
- 1 tsp red chili flakes
- 3 cloves garlic
- 1/2 cup feta, crumbled
- 2 tbsp olive oil
- Salt and pepper
Instructions
- Preheat the oven to 400°F.
- Peel and trim the carrots.
- Arrange the carrots on a baking sheet. Drizzle with olive oil and season with salt and pepper to taste.
- Bake for 25 minutes.
- Meanwhile mix the honey, garlic and chili flakes with 2 tbsp of warm water.
- Remove the carrots from the oven. Add the honey mixture and toss the carrots until they are evenly coated.
- Return the carrots to the oven for 15 minutes.
- Remove the carrots from the oven and set it to broil.
- Sprinkle the feta over the carrots and broil for 3-5 minutes, watching carefully, until the feta has started to soften.
