
This smoky sweet potato and lentil soup is so comforting and packed with nutritious ingredients. The texture is incredibly silky and the flavour has layers of sweetness, smokiness and spiciness.
This is a great soup to make a big batch of and then store in the freezer for times when you need a quick and nutritious lunch. The lentils and sweet potato are sources of fibre and the onions and garlic are sources of prebiotics.
Ingredients
- 1 onion, roughly chopped
- 3 cloves of garlic, minced
- 2 cups sweet potato, peeled and diced
- 1 red Thai chili (remove the seeds for a milder version)
- ½ tbsp smoked paprika
- 540ml can of lentils, drained and rinsed
- 2 ½ cups vegetable broth
- Extra virgin olive oil
- Salt and pepper
Instructions
- Add 2 tbsp olive oil to a pot. Cook the onion over a low heat until it starts to brown (approx. 15 minutes).
- Add the garlic for 1 minute.
- Add the chili and smoked paprika for 30 seconds, stirring continuously.
- Add the sweet potatoes, lentils, vegetable broth and a pinch of salt and pepper. Simmer for 30 minutes.
- Blend the soup until smooth.
- Enjoy!
