
This colourful one-pot sweet potato and black bean quinoa is a great midweek meal! It comes together really quickly and is packed with fibre and protein.
Ingredients
- 1 onion, finely chopped
- 3 cloves garlic, minced
- ½ tbsp chipotle powder
- 1 tbsp smoked paprika
- ½ tbsp cumin
- 2 cups sweet potato, peeled and cut into ¼ inch cubes
- ½ cup quinoa, rinsed
- 1 cup corn (I used frozen)
- 540 ml can of black beans, drained and rinsed
- 800 ml can of diced tomatoes
- 2 cups vegetable broth
- 2 tbsp extra virgin olive oil
- Salt and pepper
Instructions
- Cook the onions in 2 tbsp olive oil over a low heat for 15 minutes or until they have started to brown.
- Add the garlic for 1 minute.
- Add the spices for 30 seconds or until fragrant, stirring continuously.
- Add the remaining ingredients, season with salt and pepper and simmer over a low heat for 30 minutes.
- Enjoy!
