
I hated brussels sprouts growing up, but now they happen to be one of my favourite vegetables. Even if you are not the biggest fan of sprouts, this honey, garlic and mustard roasted brussels sprouts recipe may change your mind. They are sweet, tangy and crispy and I couldn’t help but go back for seconds!
Brussels sprouts are a source of vitamin C, vitamin K and fibre. Fibre is something that a lot of us don’t get enough of. Amongst other things, fibre supports our digestive system, helps to regulate our blood sugar levels and keeps us feeling fuller for longer. So it is definitely worth trying to add some extra fibre into your diet this holiday season!
Ingredients
- 4 cups brussels sprouts, trimmed and halved
- 1 tbsp extra virgin olive oil
- 2 tsp honey
- 1 tbsp Dijon mustard
- 3 cloves garlic minced
- 3 tbsp water
Instructions
- Preheat the oven to 425℉.
- Toss the brussels sprouts with the olive oil and a pinch of salt and pepper. Place them on a baking sheet and bake for 15 minutes.
- Mix the honey, mustard, garlic and water. Add salt and pepper to taste.
- Remove the brussels sprouts from the oven. Toss them in the honey, garlic and mustard glaze until evenly coated. Return to the oven for 15 minutes.
