
If you’re looking for a healthy lunch recipe, you’re in the right place! These roasted vegetable, black bean and hummus pinwheels will add plenty of colour, fibre and flavour to your lunchbox!
You could also make these into regular wraps – I like making them into pinwheels because they are more fun to eat that way.
Ingredients
- 3 whole wheat tortillas
- 3 tbsp hummus (I used roasted red pepper flavour)
- 1 orange bell pepper, diced
- 1 cup cherry tomatoes
- 540ml can of black beans, drained and rinsed
- 1 tbsp olive oil
- ½ tsp dried oregano
- ½ tsp dried basil
- ½ tsp garlic powder
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F.
- Toss the beans, bell peppers and tomatoes with the olive oil, oregano, basil and garlic powder. Season with salt and pepper to taste.
- Place the vegetable and bean mixture on a baking sheet and roast for 20 minutes, giving it a stir halfway through.
- To assemble the pinwheels, spread 1tbsp hummus over each tortilla. Add 1/3 of the bean and vegetable mixture to each tortilla. Roll tightly then slice and enjoy!
