
If you are trying to eat more vegetables this year but the thought of plain veggie sticks sounds boring, then adding a tasty dip can help! These healthy vegetable dips are not only delicious, but will also help you to add extra nutrients to your snack.
Each of these dips is quick and easy to make and will add plenty of flavour to your vegetables. Try serving them with carrot, celery, bell pepper or cucumber sticks for a simple yet nutritious snack. You could also add them to to a rice bowl, salad or wrap.
I used Greek yogurt as the base for these three dips. This not only makes them creamy, but also adds some protein to them.
Healthy Vegetable Dip Recipes
1. Roasted Red Pepper and Feta Dip

This roasted red pepper and feta dip is packed with flavour. It is great as a vegetable dip or in a sandwich or wrap.
Not only does it taste delicious, but it will also help you to sneak some extra plants into your diet. This is great, as increasing the amount of plants that you each eat week will help to support your gut health.
Ingredients:
1 red bell pepper, halved and deseeded
1/4 cup feta
1/2 cup Greek yogurt
1/4 cup fresh basil
1/2 tbsp extra virgin olive oil
Salt and pepper
Method:
1. Preheat the oven to 400°F.
2. Toss the bell pepper with the olive oil and a pinch of salt and pepper. Place it on a baking sheet and roast for 30 minutes, flipping it half way through cooking.
3. Blend the roasted pepper with the Greek yogurt, feta, basil and black pepper to taste.
4. Enjoy!
2. Garlicky Spinach and Feta Dip

This garlicky spinach and feta dip goes really well with sweet potato fries! The feta adds a saltiness that really complements the sweetness of sweet potatoes.
If you are trying to add some more greens into your diet, this is a great way to do so. You won’t even realize that you are getting a serving of spinach in.
Ingredients
3 cloves of garlic, minced
2 cups of spinach
1/3 cup Greek yogurt
1/3 cup feta
1/2 tbsp oregano
1/2 tbsp extra virgin olive oil
Salt and pepper
Method
1. Sauté the spinach and garlic in the olive oil for a few minutes, or until the garlic is fragrant and the spinach has wilted. Allow to cool.
2. Place the spinach and garlic in a blender along with the Greek yogurt, feta and oregano. Season to taste (I like to wait until the end to add salt, as the feta is already quite salty and so you may not need it).
3. Blend until smooth and enjoy!
3. Basil and Avocado Dip

This dip is really quick and easy to make. The combination of avocado and Greek yogurt makes it incredibly creamy.
I like adding this to salads and rice bowls, but it is also great for dipping!
Ingredients
¾ cup plain Greek yogurt
1 avocado
½ cup fresh basil
2 cloves of garlic
Juice of one lemon
Salt and pepper to taste

1. Blend and enjoy!
